Dijon Herb-Roasted Potatoes
1/3 c. Dijon mustard
2 T. olive oil
1 clove garlic, chopped
1/2 tsp. Italian seasoning
6 medium red skin potatoes, cut into chunks
Preheat the oven to 425 F.
Mix all ingredients except potatoes in small bowl.
Toss potatoes with mustard mixture and place in lightly greased 13x9x2-inch baking pan or on a shallow baking sheet.
Bake for 35 to 40 minutes, or until potatoes are fork tender, stirring occasionally.
