I remember getting this recipe from my vegetarian recipe group a long time ago, but it got lost in the shuffle and I never did try it out. However, having rediscovered it now, I can tell you this is going to be dinner sometime this week!!!
16 oz. burger (any kind of veggie burger will work)
16 oz. can refried beans
2 t. ground oregano
1 t. ground cumin
3/4 t. garlic powder
1/2 C. water
12 uncooked lasagna noodles
2 1/2 C. hot water
2 1/2 C. picante sauce
2 C. sour cream (or sour creme)
3/4 C. sliced green onion
1/2 C. Monterey Jack cheese
1/2 C. cheddar cheese
Black olives (optional)
Preheat oven to 350 ºF. Spray 9 x 13 baking dish with nonstick spray.
Combine burger, beans, spices and 1/2 C water well. Place 4 uncooked noodles in bottom of dish, followed by half of burger mixture and repeat, ending with noodles on top.
Pour hot water and picante sauce over top of noodles, cover with foil & bake for 1 1/2 hours.
Combine sour cream and onions. Spread over top of cooked casserole. Sprinkle with cheese & top with black olives (optional). Return uncovered to oven until cheese is melted (5-10 minutes).
