There’s not much better as a side dish to me as coleslaw – and this is an especially good one. Enjoy!!
4 cups (1/2 head) red cabbage, cored and thinly sliced
4 cups (1/2 head) green cabbage, cored and thinly sliced
2 Granny Smith apples, cored and coarsely chopped
3 carrots, peeled and shredded
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon caraway seeds
1 teaspoon salt
1/2 teaspoon black pepper
1.In a large bowl, combine the red and green cabbage, apples, and carrots.
2. In a small bowl, combine the remaining ingredients; mix well. Pour the mayonnaise mixture over the cabbage mixture; toss well.
3. Cover and chill until ready to serve.
