Man, oh man!!! I LOVE peanut brittle!! I was a on vegan list until recently (not much activity – may 2 posts a month, so I unlisted with them) – but this the last recipe that was posted – and I’m going to have to give it a try – and soon – but most especially for the holidays this year. So many people in our family love this stuff too – and this is such a simple recipe that I had to share it here.
Microwave Oven Peanut Brittle
1 1/2 c. peanuts
1 c. sugar
1/2 c. light corn syrup
1 T butter (we used Smart Balance Light Spread, which is vegan)
1 t. vanilla extract
1 t. baking soda
Grease a baking sheet and set aside. In a glass bowl, combine peanuts, sugar, corn syrup and salt. Cook in microwave for 6-7 minutes on high: mixture should be bubbly and peanuts browned. Stir in butter and vanilla and cook 2-3 minutes longer.
Quickly stir in the baking soda, just until mixture is foamy. Pour immediately onto prepared baking sheet. Let cool for 15 minutes or until set. Break into medium size pieces and store in an airtight container.
Yields 16 servings.
