I got this recipe from a good friend many years ago – and it has never failed to be a hit each time I’ve served them. It’s quite a process to make – just make sure you have a good old-fashioned tea towel on hand (not a terrycloth one – but a real tea towel… or even an old clean pillowcase would work – I’ve used those in the past also). You’ll see why I say to have this very strange item onhand as you read the recipe directions further. I hope if you make the rolls that you find them as tasty as we all do. These also make the most delicious cinnamon rolls – much better than the canned kind – and I personally like them better than Cinnabons – but that’s just me. 🙂 Anything homemade is better, I always say!!!
Homemade Buttermilk Rolls
2 pkg. dry yeast
1/2 c. oil
1/4 c. warm water
1 tsp. salt
3 Tbsp. sugar
1/2 tsp. baking soda
1-1/2 c. buttermilk
2-1/4 to 2-1/2 c. flour
Clean tea towel
Place yeast & 1 Tbsp. sugar in large bowl. Add oil. Add water. Heat buttermilk to lukewarm & add to yeast mixture. Add remaining sugar & mix well. Add 1 Tbsp. flour with salt & baking soda. Add enough remaining flour to make a very soft dough (it will be very, very gooey). Pour onto a very well-floured tea towel. Let dough rest 10 min. Melt 2 Tbsp. butter-flavored Crisco in 9×13 baking dish.
Knead dough. (I do this by taking up one corner of the tea towel at a time and folding the dough onto itself. As it starts to stick, add flour to the tea towel and the top of the dough. By the time the “kneading” process is through, you will have probably added another cup or so of flour.)
Pat dough down to about 1″ thickness. Cut out rolls. Dredge both sides of roll in melted Crisco. Cover and let rise for 30 minutes or ’til rolls have doubled in size. Bake 20-25 min. at 375̊.
CINNAMON ROLLS: Pat dough down to about 1/2″. Pour melted butter over dough & spring liberally with cinnamon sugar (I make mine with brown sugar so it’s thicker & richer). Roll up like jelly roll & cut. Follow same procedure as above for placing in pans & baking. Once baked, top with powdered sugar icing or cream cheese icing. DELICIOUS!!!
