My mom had a good friend when I was a little girl named Mrs. Florence Maxwell. I remember her as one of those ladies with her hair in a short beehive hairdo, and her house always smelled so good because she loved to bake. And whenever our church would have a bake sale, she always made her pumpkin bread. It was delicious – and I still love it even today!
3 c. flour
2 tsp. soda
1 1/2 tsp. salt
1 c. oil or oleo
16 oz. can pumpkin
2 tsp. cinnamon
3 1/2 c. sugar
2/3 c. water
1 c. nuts, chopped (optional)
Blend flour, soda, salt, oil, pumpkin, cinnamon & eggs.
Add sugar, water and nuts
Put into three well-greased loaf pans or nine mini loaves.
Bake 50-60 minutes @ 350 Degrees
