This is a recipe that my great grandmother had – and I don’t know how many generations before her – that has been handed down to me… and I absolutely love it! Next time I make it, I will do so without the eggs… but keep in mind that there is no more liquid/moisture in this recipe than that of the eggs and bananas, yet it is one of the moistest banana breads I have ever eaten.
Banana Kwik Bread
1 3/4 c. flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1/2 c. nuts, chopped
1/3 c. oleo
2/3 c. sugar
1 c. banana, mashed
Sift together first three ingredients; add chopped nuts
Cream oleo, sugar and beat with eggs; add alternately banana and dry ingredients
Bake @ 325º for 60 minutes in greased loaf pan. This is enough to make one loaf or three mini loaves.
