I’ve had this recipe for so long, I don’t even remember where I got it from – but I did a bit of adapting over time with it. It’s been a favorite of mine forever.
Layer the following ingredients in a 9″x13″ baking dish:
3/4 c. long-grain rice
1 lg. onion, sliced thin
3 lg. carrots, sliced thin
2 lg. potatoes, sliced thin
Lg. can V8 Juice
salt & pepper
Lightly salt & pepper each layer as you put it in the dish. Pour V8 juice over all. Bake at 325̊ for 1-1/4 to 1-1/2 hours or until vegetables are fork tender and rice is well cooked. (I actually just make sure that the entire thing is covered in V8 juice so that there is a little bit of it kind of floating on top – just to make sure that everything gets cooked really well. I’ve not used enough of it before and the vegetables don’t get done well enough.)
You can also add 1 lb. equivalent of cooked/drained hamburger (TVP) & layer above the rice. If you do, you will definitely need to add more V8 juice.
Add a nice salad or slaw and you’ve got a delicious meal.
