Here’s a recipe we tried the other day was really good – and so easy to make! And I wanted to share it here…
1 lb. of hamburger replacement (I use the crumbles from my favorite online place at Dixie Diner)
1 cup of cooked rice (whatever your favorite is – we use Jasmine rice from Thailand)
1 can of rotel tomatoes (you know, the diced tomatoes with jalapenos added – doesn’t have to be brand name)
1 can of pinto beans (I used spicy chili beans)
1 tsp. of soul seasoning (had to find the recipe for this online – it’s shared below)
1 tsp. of salt
1 tsp. of black pepper
Rehydrate the beef crumbles – or heat them up if you are using the frozen ones). Add rotel tomatoes, beans, cooked rice and seasonings to the pan. Once everything is heated all the way through, serve and enjoy! Tastes great with a salad!
I actually added two cups of rice (we like lots of rice) and 2 cans of beans. This was a great hit for the two of us – and I can hardly wait to try it for potluck!!!
Now for the recipe for that Soul Seasoning… this will be great on a LOT of stuff!!!
1/4 cup salt
2 tablespoons ground black pepper
1 tablespoon cayenne pepper
1 tablespoon paprika
1 tablespoon onion powder
1 teaspoon garlic powder (I used 1 tablespoon as we love lots of garlic)
Mix it all together and store in a shaker.
